Chickpea “Cookie Dough” Bites

I am so addicted to these chickpea “cookie dough” bites! Just chickpeas, almond butter, honey, vanilla, coconut milk, dark chocolate chips, and a touch of oats. While making these, I kept thinking about my hubby who has a raw cookie dough obsession. Well, he approves of these as a healthy alternative! Why not nourish yourself and feel like your splurging?

Traditional cookie dough is filled with excess refined sugar, refined flour, and saturated fat. This yummy alternative is packed full of fiber, protein, and healthy fats.

Ingredients:

  • 1 can chickpeas / garbanzo beans, drained and rinsed
  • 4-6 tablespoons almond butter
  • 2-4 tablespoons honey, depending on how sweet you want it
  • 1 teaspoon vanilla extract
  • 2 tablespoons oats
  • 2-4 tablespoons almond milk, as needed to allow dough to smooth in blender
  • 1/4 cup dark chocolate chips, plus a few more to top the balls with

Method:

  1. Blend the rinsed chickpeas, almond butter, honey, vanilla, oats, and almond milk in blender until smooth. Start with 2 tablespoons of almond milk, and only add more if needed. You may occasionally need to scrape sides of blender with spatula. I use a Ninja blender with blades all the way up, which works really well.
  2. Fold chocolate chips in with spatula or spoon. DO NOT BLEND!
  3. Place in fridge or freezer for 20 minutes to allow dough to firm up.
  4. Scoop by tablespoons, and roll into balls using slightly damp hands. Place on plate. I roll 2 or 3 balls, and then re-wet my hands.
  5. Top each ball with 2 or 3 chocolate chips to make it extra pretty!
  6. Place in fridge, covered. Allow to get nice and cold before eating!
