
No chips here – just fresh, crisp apple drizzled with natural peanut butter and Greek yogurt, finished with a sprinkle of blueberries, dark chocolate chips, nuts or seeds of choice, and/or toasted UNsweetened coconut.
This is a nutritious alternative when you’re craving something crunchy, sweet, and salty (saltiness from the peanut butter). You’ll save hundreds of calories compared to processed chips or desserts. Better yet, you’ll get lots of fiber, protein, vitamins, and minerals with this.
You could switch it up by topping with dried fruit, different nuts or seeds, and even some popcorn or fresh berries.
The best part is, it looks pretty too!
Here’s a simple and yummy version –
Ingredients:
- 1 Apple of your favorite variety; my favorite type of apple is Pink Lady
- 1-2 tablespoons natural peanut butter or almond butter, scooped into bottom corner of ziploc baggie
- 1-2 tablespoons plain or vanilla Green yogurt, scooped into bottom corner of ziploc baggie
- 2 tablespoons dark chocolate chips
- 2 tablespoons shredded coconut, preferably UNsweetened, can be toasted if desired
(Increase the ingredient quantities if making for more than 1 person)
Method:
- Cut apple into thin slices, and arrange in one flat layer on a plate.
- Cut very tiny corner off of ziplocs filled with yogurt and peanut butter. Squeeze these over the apple, drizzling evenly.
- Finish off by sprinkling evenly with the chocolate chips and coconut.
Easy peasy! Eat up without the guilt!
