Healthy Pasta Salad (chickpea-based pasta!)

You can find the Banza brand chickpea pasta on Amazon for the best price here as a variety pack (can be used for warm pasta dishes, mac and cheese, etc.).

Ingredients:

  • 1 box of Banza or Barilla chickpea pasta
  • 1-2 cups chopped raw veggies of choice (I like bell pepper, onion, tomato, and black olives).
  • 1/2 package of turkey pepperoni
  • 4 ounces (1 cup) feta cheese (or other cheese of choice)
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon dried Italian herbs

Method:

  1. Cook pasta per package directions and rinse with cold water. Put in fridge to chill while you prep the other ingredients.
  2. Chop veggies (or purchase pre-chopped).
  3. Add all ingredients to pasta.

*Store in fridge for up to five days.
