Ingredients:
- 1 box of Banza or Barilla chickpea pasta
- 1-2 cups chopped raw veggies of choice (I like bell pepper, onion, tomato, and black olives).
- 1/2 package of turkey pepperoni
- 4 ounces (1 cup) feta cheese (or other cheese of choice)
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon dried Italian herbs
Method:
- Cook pasta per package directions and rinse with cold water. Put in fridge to chill while you prep the other ingredients.
- Chop veggies (or purchase pre-chopped).
- Add all ingredients to pasta.
*Store in fridge for up to five days.
