Mediterranean Zucchini Noodle (Zoodle) Salad

Yes, I have a zucchini noodle (zoodle) obsession. My spiralizer is one of my favorite kitchen tools. I make a lot of zoodle dishes when I get hired to do healthy cooking demos, and this chilled pasta salad style recipe is one of my faves. I especially love it because it takes minimal time, prep, and chopping. There’s nothing better than a quick and easy dish that’s still healthy!

This is what my spiral slicer looks like:

You just put the zucchini in one end, twist it, and the noodles will come out the side where the little blades are.

The natural oils from the fresh avocado and from the sundried tomatoes packed in oil give the dish a rich fatty flavor, so we don’t have to add any calorie-laden oils to the dish. The sundried tomatoes, olives, feta, and fresh herbs are also all high flavor ingredients, so we don’t have to add much else except a little vinegar and honey. When I cook this at my demos, everyone always loves it, and many people come back for seconds!

Ingredients:

  • 2 zucchini
  • 1/4 cup chopped sundried tomatoes packed in oil
  • 1/4 cup sliced kalamata olives
  • 1/2 cup crumbled feta
  • 1 avocado, chopped
  • 1/4 cup chopped fresh Italian parsley
  • 1/4 cup chopped fresh basil
  • 4 TB white balsamic vinegar, or to taste
  • A drizzle of real honey
  • A touch of salt and pepper

Method:

  1. Spiralize the zucchini into noodles with a handheld or electric spiral slicer into a large bowl. Use the skinnier noodle size option. Be sure to cut the zucchini every foot or so, or else you will end up with 3 foot long noodles! You can find a spiralizer at Bed Bath and Beyond, Amazon.com, or other various stores with kitchen accessories.
  2. Add the rest of the ingredients and mix well. Allow to sit for a few minutes so the noodles can absorb more flavor. Serve as a side, or as a meal with a protein if your choice.
