These personal pizzas will satisfy your pizza cravings while remaining healthy and delicious. They only take about 15 minutes or so to make- or a bit longer if you want to sauté veggies first to add on top.

The Ezekiel sprouted grain tortillas work great for this. They are thin and crisp up perfectly when baked. You can find them in the frozen section of many grocery stores. Here’s a picture of them below. Any whole-grain wrap or tortilla should work fine too.

I like to keep no-cook veggies on hand to use as toppings for foods like this. That means less chopping, less time, and less dishes. My favs are jarred artichoke hearts, jarred sun-dried tomatoes, sliced olives, banana peppers, pickled jalapeños, fresh spinach, and fresh basil. Hubby loves anchovies… not my thing. Just watch out for the sodium content on some of these items.
You could also add any meat or protein you like. It just needs to be cooked first if it’s raw.
The pizza pictured above is topped with sun-dried tomatoes, arugula, buffalo-milk mozzarella, and sheep-milk feta. I’m a cheater- I use organic canned pizza sauce. Def not spending hours (or even minutes) in the kitchen to make my own sauce. Here’s a picture of the mozzarella below. We get it from Whole Foods. It is SO delicious.

Ingredients:
- Ezekiel sprouted grain tortillas, or other whole-grain tortilla/wrap of choice
- Pizza sauce, preferably organic, about 2-4 TB per pizza
- Cheese of choice (such as mozzarella, Italian blend, and/or feta), about 1/4 cup per pizza
- Optional veggie toppings of choice (such as jarred artichoke hearts, jarred sun-dried tomatoes, sliced olives, banana peppers, pickled jalapeños, fresh spinach or other leafy green, fresh basil, and/or sautéed bell pepper/onion/mushroom/zucchini/etc.), about 1/4-1/2 cup per pizza
- Optional protein toppings of choice (such as grilled chicken, cooked uncured sausage, uncured pepperoni, uncured ham, sliced and sautéed tempeh, sliced and sautéed tofu, jarred anchovies, or even canned beans or lentils), about 1/4 cup per pizza
Method:
- If using the frozen Ezekiel tortillas, you will need to let them defrost for an hour or so before use.
- Preheat oven to 350F once tortillas are defrosted.
- Top each with about 2-4 TB pizza sauce, per preference of how saucy you like it 🙂 .
- Top each with about 1/4 cup cheese. (Or leave off the cheese if you want it vegan!)
- Add veggie and protein toppings of choice.
- Bake for about 10 minutes, or even longer if you want it crispier. We like to put the pizza directly on the oven rack, but you can use a baking sheet if you prefer.
