
I’m a chocolate-peanut butter-banana FREAK, so these are one of my favorite healthy nibbles to have on hand at home. Hubby and son love them too. If you know me, you know I like to cook with minimal hassle and minimal ingredients. This recipe removes the hassle or having to food process numerous ingredients- just processing oats into oat flour if you’re not using ready-made oat flour.

Ingredients:
- 1 cup oat four OR 1 cup oats that you have processed or blended to powder-like consistency
- ½ cup natural peanut butter
- ¼ cup honey
- 2 TB cocoa powder
- 1 mashed banana
- Optional: 1 TB chia seeds
- Unsweetened shredded coconut for rolling the truffles in
Method:
- Process the oats into a flour/powder-like consistency if not using oat flour.
- Put in bowl and add the peanut butter, honey, cocoa, mashed banana, and chia (if using).
- Press and mix with big metal or wooden spoon until well combined. This may take some elbow grease and a few minutes.
- Pour some of the coconut shreds into a small bowl.
- Roll tablespoons of the mixture in your palms into balls, and roll the balls in the coconut. Place on plate and chill in refrigerator to firm.

And you’re done! Be ready to enjoy an indulgent bite without the guilt!
