Hitting my sweet tooth the healthy way:
Oat/almond/date/chia tart crust, with banana/avocado/cocoa/chia filling, topped with unsweetened coconut shreds. No refined oils, sugars, or flours.
I make versions of this crust all the time; I’ve tweaked it over the years and tried many different clean (but delicious) fillings. It also tastes great made with smashed berry and chia filling, or with soft spread goat cheese and whole blueberries. Yum!

Crust ingredients:
-2 cups oats
-1/2 cup almonds or almond butter (natural peanut butter works fine too if you eat it)
-1/2 cup dates or date paste (the paste can be found in middle eastern markets)
-1 tablespoon chia seeds
Filling ingredients:
-4 large banana
-2 large soft and ripe avocado
-1/4 cup cocoa powder
-1 tablespoon chia seeds
-1 tsp vanilla
-1/2 tsp cinnamon
-optional 1-2 TB honey
1. If using whole dates and whole almonds, soak them in warm water for at least an hour to soften them. Use a good blender to blend the dates and then add the nuts to blend.
2. Once the dates and nuts are blended together well, add the oats and chia, and blend until all are combined well.
3. Add little bits of water if necessary to help blend.
4. Press firmly into bottom of 10″ tart pan, or into similar sized glass dish or steel pan (square or rectangle works fine too).
5. If you want your crust a little crispy-crumbly, bake it at 350 degrees F for 15 minutes. If you want it raw and soft, don’t bake it.
5. Blend or mash all of the filling ingredients separately.
6. Smooth filling over crust.
7. Refrigerate until cool and enjoy!
